Ingredients
Salad
- 2 grilled chicken breasts, sliced
- 1 large avocado, diced
- 5–6 cups romaine or mixed greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/2 cup corn or black beans (optional)
- 1/4 cup shredded cheese or feta (optional)
Dressing
- 3 tbsp olive oil
- 1 tbsp lime juice or lemon juice
- 1 tsp Dijon mustard
- 1 small garlic clove, minced
- Salt and black pepper to taste
Instructions
1. Grill the Chicken
Season chicken with:
- Olive oil
- Salt
- Pepper
- Garlic powder or paprika (optional)
Grill for about 5–6 minutes per side until fully cooked. Let rest, then slice.
2. Make the Salad
In a large bowl combine:
- Greens
- Tomatoes
- Cucumber
- Onion
- Avocado
- Corn or beans if using
Top with sliced grilled chicken.
3. Mix the Dressing
Whisk together all dressing ingredients and drizzle over the salad.
