Ingredients

For the Carrot Cake

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups finely grated carrots
  • 1 cup chopped walnuts or pecans
  • 1/2 cup crushed pineapple, drained (optional)
  • 1/2 cup raisins (optional)

For the Cream Cheese Frosting

  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3–4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1–2 tablespoons milk if needed

Instructions

Step 1: Prepare the Oven and Pans

Preheat oven to 350°F (175°C).

Grease and line two 8-inch round cake pans with parchment paper.


Step 2: Mix the Dry Ingredients

In a large bowl, whisk together:

  • Flour
  • Baking powder
  • Baking soda
  • Salt
  • Cinnamon
  • Nutmeg

Set aside.


Step 3: Mix the Wet Ingredients

In another large bowl, whisk together:

  • Granulated sugar
  • Brown sugar
  • Vegetable oil
  • Eggs
  • Vanilla extract

Mix until smooth and fully combined.


Step 4: Add Carrots and Nuts

Fold into the wet mixture:

  • Grated carrots
  • Chopped nuts
  • Pineapple if using
  • Raisins if using

Step 5: Combine Wet and Dry Ingredients

Gradually add the dry ingredients into the wet ingredients.

Mix gently until no dry flour remains.

Do not overmix.


Step 6: Bake the Cake

Divide batter evenly between prepared pans.

Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.

Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.


Cream Cheese Frosting

Step 7: Make the Frosting

In a large bowl, beat:

  • Cream cheese
  • Butter

Mix until smooth and creamy.

Gradually add powdered sugar and vanilla extract.

Beat until fluffy.

Add a little milk if frosting is too thick.


Assemble the Cake

Step 8: Layer and Frost

  1. Place one cake layer on a serving plate.
  2. Spread frosting evenly on top.
  3. Add second cake layer.
  4. Frost the top and sides of the cake.

Decorate with chopped nuts or extra carrot shreds if desired.
