Ingredients
Pudding
- 1 cup sugar
- ⅓ cup all-purpose flour
- Pinch of salt
- 3 cups whole milk
- 4 egg yolks
- 2 tbsp butter
- 1 tsp vanilla extract
Layers
- 4 ripe bananas, sliced
- 1 box vanilla wafers
Optional topping
- Whipped cream or meringue
Instructions
1. Make the pudding
- In a saucepan, whisk sugar, flour, and salt.
- Gradually whisk in milk.
- Cook over medium heat until thickened.
- Beat egg yolks in a bowl.
- Slowly whisk in a little hot pudding mixture to temper eggs.
- Return mixture to saucepan and cook 2 more minutes.
- Remove from heat and stir in butter and vanilla.
2. Layer
In a serving dish:
- Layer vanilla wafers
- Add banana slices
- Pour pudding over top
Repeat layers until ingredients are used.
3. Chill
- Cover and refrigerate at least 4 hours.
- Wafers soften as it chills.
4. Finish
Top with whipped cream before serving.
Tips for the best flavor
- Use ripe bananas with brown speckles
- Whole milk gives the creamiest texture
- Let it chill overnight if possible
- Add cream cheese or sweetened condensed milk for extra richness
