🥒🍅 Cucumber & Tomato Salad
Ingredients
- 2 cucumbers, sliced
- 3 medium tomatoes, chopped
- ¼ red onion, thinly sliced (optional)
- 2 tbsp olive oil
- 1 tbsp lemon juice or red wine vinegar
- Salt and black pepper, to taste
- 1 tbsp fresh parsley, dill, or basil, chopped (optional)
Instructions
- Combine cucumbers, tomatoes, and onion in a large bowl.
- Drizzle with olive oil and lemon juice (or vinegar).
- Season with salt and pepper.
- Toss gently until evenly coated.
- Sprinkle with fresh herbs and serve immediately.
Variations
- Add crumbled Feta for a Mediterranean twist.
- Include olives for extra flavor.
- Add avocado for a creamier texture.
