Hamburger Steak With Gravy

Posted on June 3, 2026

Few comfort foods are as satisfying as a juicy hamburger steak smothered in rich, savory onion gravy. This classic dish transforms simple ground beef into a hearty family meal that’s perfect for busy weeknights or cozy weekend dinners. Serve it with mashed potatoes, rice, or buttered vegetables for a complete and delicious meal.

Preparation Time

  • Prep Time: 15 minutes
  • Cook Time: 25 minutes
  • Total Time: 40 minutes
  • Servings: 4

Ingredients

For the Hamburger Steaks

  • 1½ pounds (680 g) ground beef
  • ½ cup breadcrumbs
  • 1 large egg
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 tablespoon olive oil

For the Gravy

  • 2 tablespoons butter
  • 1 large onion, thinly sliced
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

Step 1: Make the Hamburger Steaks

In a large mixing bowl, combine the ground beef, breadcrumbs, egg, diced onion, garlic, Worcestershire sauce, salt, pepper, and paprika.

Mix gently until just combined. Avoid overmixing, which can make the patties tough.

Divide the mixture into four equal portions and shape them into oval patties about ½ inch thick.

Step 2: Brown the Patties

Heat the olive oil in a large skillet over medium-high heat.

Add the hamburger steaks and cook for 4 to 5 minutes per side until nicely browned. The patties do not need to be fully cooked at this stage.

Transfer them to a plate and set aside.

Step 3: Cook the Onions

Reduce the heat to medium and melt the butter in the same skillet.

Add the sliced onions and cook, stirring occasionally, for about 8 to 10 minutes until soft, golden, and caramelized.

Step 4: Prepare the Gravy

Sprinkle the flour over the onions and stir continuously for 1 minute.

Gradually pour in the beef broth while whisking to prevent lumps from forming.

Add Worcestershire sauce, onion powder, garlic powder, salt, and pepper.

Bring the mixture to a gentle simmer and cook for 3 to 4 minutes until the gravy thickens.

Step 5: Finish the Dish

Return the hamburger steaks to the skillet, nestling them into the gravy.

Cover and simmer for 10 to 12 minutes, or until the patties are fully cooked and tender.

Spoon the gravy over the steaks occasionally as they cook.

Step 6: Serve

Transfer the hamburger steaks to serving plates and generously spoon the onion gravy over the top.

Garnish with fresh parsley and serve hot.

Serving Suggestions

This dish pairs wonderfully with:

  • Creamy mashed potatoes
  • Buttered egg noodles
  • Steamed green beans
  • Roasted carrots
  • White or brown rice
  • Dinner rolls

Tips for Success

  • Use ground beef with some fat content (80/20 works best) for juicy patties.
  • Cook the onions slowly for deeper flavor in the gravy.
  • If the gravy becomes too thick, add a little extra beef broth.
  • For extra richness, stir a splash of heavy cream into the gravy before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave until warmed through.
