Fideo with Potatoes and Ground Beef is a comforting, budget-friendly meal packed with savory flavors. Toasted fideo noodles, tender potatoes, seasoned ground beef, and a rich tomato broth come together in one skillet for a hearty family dinner that’s both satisfying and easy to prepare.

Ingredients

  • 1 pound ground beef
  • 8 ounces fideo noodles
  • 2 medium potatoes, peeled and diced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 can (14.5 ounces) diced tomatoes
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon chili powder
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper
  • Fresh cilantro, chopped (for garnish)

Instructions

Step 1: Brown the Ground Beef

Heat a large skillet or Dutch oven over medium-high heat.

Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Drain excess grease if necessary.

Transfer the beef to a plate and set aside.

Step 2: Toast the Fideo

Add the vegetable oil to the same skillet.

Add the fideo noodles and cook, stirring frequently, until they become golden brown. Watch carefully to prevent burning.

Remove the toasted noodles and set aside.

Step 3: Cook the Vegetables

Add the diced onion to the skillet and sauté for about 3 minutes until softened.

Stir in the garlic and cook for another 30 seconds.

Add the diced potatoes and cook for 5 minutes, stirring occasionally.

Step 4: Build the Broth

Add the diced tomatoes, tomato paste, cumin, paprika, chili powder, salt, and black pepper.

Stir well to combine all the ingredients.

Pour in the beef broth and bring the mixture to a gentle boil.

Step 5: Combine Everything

Return the cooked ground beef and toasted fideo noodles to the skillet.

Stir everything together and reduce the heat to low.

Cover and simmer for 15 to 20 minutes, or until the potatoes are tender and the noodles have absorbed much of the broth.

Step 6: Finish and Serve

Taste and adjust seasonings if needed.

Sprinkle with freshly chopped cilantro before serving.

Serve hot and enjoy.

Tips for Success

  • Toasting the fideo noodles adds a rich, nutty flavor that makes the dish extra delicious.
  • Use chicken broth if beef broth is unavailable.
  • Add diced carrots or bell peppers for more vegetables.
  • For a spicy version, add diced jalapeños or a pinch of cayenne pepper.
  • If the mixture becomes too thick, add a little extra broth during cooking.

Storage

Store leftovers in an airtight container in the refrigerator for up to 4 days.
