Smothered Green Chile Bean Burrito

These Smothered Green Chile Bean Burritos are packed with creamy refried beans, wrapped in soft flour tortillas, and covered in a rich green chile sauce and melted cheese. They’re hearty, comforting, and perfect for a satisfying Mexican-inspired dinner.

Ingredients

For the Burritos

  • 6 large flour tortillas
  • 2 cans (16 oz each) refried beans
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ½ teaspoon ground cumin
  • ½ teaspoon garlic powder

For the Green Chile Sauce

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups chicken or vegetable broth
  • 1 can (7 oz) diced green chiles
  • ½ teaspoon cumin
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Toppings

  • Extra shredded cheese
  • Chopped cilantro
  • Sour cream
  • Diced tomatoes
  • Sliced jalapeños

Instructions

Step 1: Make the Green Chile Sauce

  1. Melt the butter in a saucepan over medium heat.
  2. Whisk in the flour and cook for 1 minute.
  3. Slowly whisk in the broth until smooth.
  4. Add the green chiles, cumin, onion powder, salt, and pepper.
  5. Simmer for 8–10 minutes, stirring occasionally, until slightly thickened.

Step 2: Prepare the Bean Filling

  1. In a saucepan, warm the refried beans over medium-low heat.
  2. Stir in the cumin and garlic powder.
  3. Cook until heated through.

Step 3: Assemble the Burritos

  1. Warm the tortillas until pliable.
  2. Divide the bean mixture among the tortillas.
  3. Sprinkle a little cheese over the beans.
  4. Fold in the sides and roll tightly into burritos.

Step 4: Bake

  1. Preheat the oven to 375°F (190°C).
  2. Place the burritos seam-side down in a greased 9×13-inch baking dish.
  3. Pour the green chile sauce evenly over the burritos.
  4. Top with the remaining cheddar and Monterey Jack cheese.

Step 5: Finish and Serve

  1. Bake for 20–25 minutes, until bubbly and golden.
  2. Remove from the oven and let rest for 5 minutes.
  3. Garnish with cilantro, sour cream, tomatoes, and jalapeños.

Tips for the Best Burritos

  • Add seasoned ground beef or shredded chicken for extra protein.
  • Use roasted Hatch green chiles for authentic Southwestern flavor.
  • Warm tortillas before rolling to prevent cracking.
  • For extra creaminess, add a few spoonfuls of sour cream to the beans.

Storage

  • Refrigerate leftovers for up to 4 days.
  • Freeze assembled burritos before adding sauce for up to 2 months.
  • Reheat covered in the oven until hot.
