Keto Cloud Cake

Light as air, delightfully fluffy, and low in carbs, this Keto Cloud Cake is the perfect dessert for anyone following a keto or low-carb lifestyle. With a soft, cloud-like texture and a hint of vanilla sweetness, it’s delicious on its own or topped with fresh berries and whipped cream.

Ingredients

For the Cake

  • 6 large eggs, separated
  • 4 oz (113g) cream cheese, softened
  • ½ cup powdered erythritol or preferred keto sweetener
  • 1 teaspoon vanilla extract
  • ¼ teaspoon cream of tartar
  • Pinch of salt

Optional Topping

  • Sugar-free whipped cream
  • Fresh strawberries or raspberries
  • Dusting of powdered keto sweetener

Instructions

Step 1: Prepare the Oven

  1. Preheat your oven to 300°F (150°C).
  2. Line an 8-inch round cake pan with parchment paper and lightly grease.

Step 2: Make the Cream Cheese Mixture

  1. In a large bowl, beat the cream cheese until smooth.
  2. Add the egg yolks, sweetener, and vanilla extract.
  3. Mix until creamy and well combined.

Step 3: Whip the Egg Whites

  1. In a separate clean bowl, add the egg whites, cream of tartar, and salt.
  2. Beat with an electric mixer until stiff peaks form.
  3. The egg whites should hold their shape when the beaters are lifted.

Step 4: Combine

  1. Gently fold one-third of the egg whites into the cream cheese mixture.
  2. Carefully fold in the remaining egg whites in batches.
  3. Mix just until combined to keep the batter light and airy.

Step 5: Bake

  1. Pour the batter into the prepared cake pan.
  2. Smooth the top gently.
  3. Bake for 35–40 minutes, or until the cake is lightly golden and set in the center.

Step 6: Cool

  1. Turn off the oven and leave the cake inside with the door slightly open for 10 minutes.
  2. Remove and cool completely before serving.
