Cabbage Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups green cabbage, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable or chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 bay leaf
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

Step 1: Sauté the Aromatics

  1. Heat olive oil in a large soup pot over medium heat.
  2. Add onion and cook for 4–5 minutes until softened.
  3. Stir in garlic and cook for 30 seconds until fragrant.

Step 2: Add the Vegetables

  1. Add cabbage, carrots, and celery.
  2. Cook for 5 minutes, stirring occasionally.

Step 3: Simmer

  1. Pour in the broth and diced tomatoes.
  2. Add thyme, paprika, and bay leaf.
  3. Bring to a boil, then reduce heat and simmer for 25–30 minutes, or until the vegetables are tender.

Step 4: Finish and Serve

  1. Remove the bay leaf.
  2. Season with salt and pepper to taste.
  3. Stir in fresh parsley.
  4. Serve hot with crusty bread or crackers.

Tips for the Best Cabbage Soup

  • Add cooked ground beef, turkey, or sausage for extra protein.
  • Toss in zucchini, green beans, or potatoes for a heartier soup.
  • A squeeze of fresh lemon juice before serving brightens the flavors.
