Ingredients
- 6 eggs
- ¼ cup milk
- ½ cup bell peppers, diced
- ¼ cup onion, finely chopped
- ½ cup spinach, chopped
- ¼ cup shredded cheese
- Salt & black pepper to taste
- Cooking spray or oil
Optional add-ins:
- Mushrooms
- Tomatoes
- Turkey sausage
- Herbs or chili flakes
Instructions
1. Prepare the Mixture
- Whisk eggs and milk together.
- Stir in vegetables, cheese, salt, and pepper.
2. Prep the Muffin Cups
- Grease silicone muffin cups or ramekins well.
3. Fill
- Pour egg mixture about ¾ full into each cup.
4. Air Fry
- Cook at 320°F (160°C) for 10–12 minutes until set in the center.
5. Cool & Serve
- Let cool a few minutes before removing from cups.
Tips
- Silicone muffin liners work best in the air fryer.
- Don’t overfill — eggs puff up while cooking.
- Store in the fridge up to 4 days and reheat easily.
