Air Fryer Veggie Egg Muffins

Ingredients

  • 6 eggs
  • ¼ cup milk
  • ½ cup bell peppers, diced
  • ¼ cup onion, finely chopped
  • ½ cup spinach, chopped
  • ¼ cup shredded cheese
  • Salt & black pepper to taste
  • Cooking spray or oil

Optional add-ins:

  • Mushrooms
  • Tomatoes
  • Turkey sausage
  • Herbs or chili flakes

Instructions

1. Prepare the Mixture

  • Whisk eggs and milk together.
  • Stir in vegetables, cheese, salt, and pepper.

2. Prep the Muffin Cups

  • Grease silicone muffin cups or ramekins well.

3. Fill

  • Pour egg mixture about ¾ full into each cup.

4. Air Fry

  • Cook at 320°F (160°C) for 10–12 minutes until set in the center.

5. Cool & Serve

  • Let cool a few minutes before removing from cups.

Tips

  • Silicone muffin liners work best in the air fryer.
  • Don’t overfill — eggs puff up while cooking.
  • Store in the fridge up to 4 days and reheat easily.

Great for meal prep, quick breakfasts, or high-protein snacks.
