Marinated Cucumber, Onion, and Tomato Salad

This refreshing marinated salad is crisp, tangy, and full of fresh garden flavor. Perfect as a side dish for grilled meats, barbecue, or a light lunch.

Ingredients

  • 2 cucumbers, sliced
  • 3 tomatoes, chopped or sliced
  • 1 small red or white onion, thinly sliced
  • ΒΌ cup vinegar (white, red wine, or apple cider)
  • 2 tbsp olive oil
  • 1 tbsp sugar or honey
  • Salt & black pepper to taste
  • 1 tsp dried oregano or Italian seasoning
  • Fresh parsley or dill (optional)

Instructions

1. Prepare the Vegetables

  1. Slice cucumbers and onions thinly.
  2. Chop or slice tomatoes.
  3. Place everything in a large bowl.

2. Make the Marinade

  1. Whisk together:
    • Vinegar
    • Olive oil
    • Sugar or honey
    • Salt
    • Pepper
    • Oregano

3. Marinate

  1. Pour marinade over vegetables.
  2. Toss gently to coat.
  3. Cover and refrigerate for at least 30 minutes.

4. Serve

  • Stir before serving.
  • Best served cold.
