Ingredients
- 2 cucumbers, sliced
- 3 tomatoes, chopped or sliced
- 1 small red or white onion, thinly sliced
- ΒΌ cup vinegar (white, red wine, or apple cider)
- 2 tbsp olive oil
- 1 tbsp sugar or honey
- Salt & black pepper to taste
- 1 tsp dried oregano or Italian seasoning
- Fresh parsley or dill (optional)
Instructions
1. Prepare the Vegetables
- Slice cucumbers and onions thinly.
- Chop or slice tomatoes.
- Place everything in a large bowl.
2. Make the Marinade
- Whisk together:
- Vinegar
- Olive oil
- Sugar or honey
- Salt
- Pepper
- Oregano
3. Marinate
- Pour marinade over vegetables.
- Toss gently to coat.
- Cover and refrigerate for at least 30 minutes.
4. Serve
- Stir before serving.
- Best served cold.
