Ingredients

  • 3–4 pound beef roast (ribeye roast, sirloin roast, or chuck roast)

  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika

  • 1 cup beef broth
  • 2 tablespoons butter

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Pat the roast dry with paper towels.
  3. In a small bowl, mix olive oil, garlic, rosemary, thyme, onion powder, paprika, salt, and pepper.
  4. Rub the seasoning mixture all over the beef roast.
  5. Place the roast in a roasting pan and pour beef broth around the bottom of the pan.
  6. Dot the top of the roast with butter.
  7. Roast uncovered for about 1½ hours, or until the internal temperature reaches:
    • 125°F for rare
    • 135°F for medium-rare
    • 145°F for medium
  8. Baste the roast occasionally with pan juices during cooking.
  9. Remove from oven and tent loosely with foil.
  10. Let the roast rest for 15 minutes before slicing.
  11. Slice against the grain and serve warm.
