CRAWFISH FRIES WITH CREAMY QUESO SAUCE

Ingredients

For the Fries

  • 1½ lbs frozen French fries
  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil

For the Crawfish

  • 1 lb crawfish tail meat
  • 1 tbsp butter
  • 1 tsp garlic, minced
  • ½ tsp paprika
  • ½ tsp Cajun seasoning
  • 1 tbsp chopped green onions

Creamy Queso Sauce

  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • ½ cup pepper jack cheese
  • 1 small can diced green chilies
  • ½ tsp garlic powder
  • Salt and black pepper to taste

Toppings

  • Jalapeño slices
  • Green onions
  • Crispy bacon bits
  • Fresh parsley
  • Extra Cajun seasoning

Instructions

1. Bake the Fries

  • Cook fries according to package directions until extra crispy.
  • Toss with olive oil and Cajun seasoning immediately after baking.

2. Cook the Crawfish

  • Melt butter in a skillet over medium heat.
  • Add garlic and cook for 30 seconds.
  • Stir in crawfish tails, paprika, and Cajun seasoning.
  • Cook 3–4 minutes until heated through.
  • Add green onions and remove from heat.

3. Make the Queso

  • Melt butter in a saucepan.
  • Whisk in flour and cook 1 minute.
  • Slowly add milk and cream while whisking.
  • Simmer until slightly thickened.
  • Lower heat and stir in cheeses until smooth.
  • Mix in green chilies, garlic powder, salt, and pepper.

4. Assemble

  • Spread fries onto a serving platter.
  • Spoon crawfish over the fries.
  • Drizzle generously with queso sauce.
  • Add jalapeños, bacon bits, and green onions.

Optional Add-Ins

  • Blackened shrimp
  • Andouille sausage
  • Pickled onions
  • Hot sauce drizzle

Serving Tip

Serve immediately while the fries stay crispy and the queso is hot and creamy. This pairs especially well with cold sweet tea or citrus lemonade.
