Keto Cheeseburger Quesadillas…

🥓🧀 Keto Cheeseburger Quesadillas

A low-carb twist on a cheeseburger, using a crispy cheese “tortilla” instead of traditional tortillas.

Ingredients

  • 1 lb (450 g) ground beef
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper, to taste
  • 2 cups shredded cheddar cheese, divided
  • 4 slices cheddar or American cheese
  • 2 tbsp sugar-free ketchup
  • 1 tbsp yellow mustard
  • ¼ cup diced pickles
  • Optional: diced onions, lettuce, or burger sauce

Instructions

  1. Cook the Beef
    • Brown the ground beef in a skillet over medium heat.
    • Season with garlic powder, onion powder, salt, and pepper.
    • Drain excess fat if needed.
  2. Make the Cheese Shells
    • Line a baking sheet with parchment paper.
    • Create four circles using about ¼ cup shredded cheddar each.
    • Bake at 400°F (200°C) for 5–7 minutes, until melted and lightly golden.
    • Let cool for 1–2 minutes so they become flexible.
  3. Assemble
    • Place beef on one half of each cheese shell.
    • Add a slice of cheese, pickles, ketchup, and mustard.
    • Fold over to form a quesadilla shape.
  4. Crisp Them Up
    • Return to a skillet over medium heat for 1–2 minutes per side until crispy and the cheese inside melts.

Optional Burger Sauce

Mix:

  • 2 tbsp mayonnaise
  • 1 tbsp sugar-free ketchup
  • 1 tsp mustard
  • 1 tsp pickle relish

  • Protein: 25–30 g
  • Fat: 25–35 g
