🥓🧀 Keto Cheeseburger Quesadillas
A low-carb twist on a cheeseburger, using a crispy cheese “tortilla” instead of traditional tortillas.
Ingredients
- 1 lb (450 g) ground beef
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper, to taste
- 2 cups shredded cheddar cheese, divided
- 4 slices cheddar or American cheese
- 2 tbsp sugar-free ketchup
- 1 tbsp yellow mustard
- ¼ cup diced pickles
- Optional: diced onions, lettuce, or burger sauce
Instructions
- Cook the Beef
- Brown the ground beef in a skillet over medium heat.
- Season with garlic powder, onion powder, salt, and pepper.
- Drain excess fat if needed.
- Make the Cheese Shells
- Line a baking sheet with parchment paper.
- Create four circles using about ¼ cup shredded cheddar each.
- Bake at 400°F (200°C) for 5–7 minutes, until melted and lightly golden.
- Let cool for 1–2 minutes so they become flexible.
- Assemble
- Place beef on one half of each cheese shell.
- Add a slice of cheese, pickles, ketchup, and mustard.
- Fold over to form a quesadilla shape.
- Crisp Them Up
- Return to a skillet over medium heat for 1–2 minutes per side until crispy and the cheese inside melts.
Optional Burger Sauce
Mix:
- 2 tbsp mayonnaise
- 1 tbsp sugar-free ketchup
- 1 tsp mustard
- 1 tsp pickle relish
