Ingredients (4 servings)
Chicken
- 500 g (1 lb) boneless chicken thighs or breasts, diced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- 1 tsp garlic powder
Rice
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 tsp turmeric (for the golden color)
- 1 cup mixed vegetables (peas, carrots, corn, bell peppers)
- 2 tbsp chopped parsley (optional)
Instructions
- Season the chicken
- Toss chicken with salt, pepper, paprika, and garlic powder.
- Brown the chicken
- Heat oil in a large skillet or pot over medium-high heat.
- Cook chicken for 5–6 minutes until lightly golden.
- Remove and set aside.
- Cook the aromatics
- In the same pan, sauté onion for 3 minutes.
- Add garlic and cook for 30 seconds.
- Toast the rice
- Stir in rice and turmeric.
- Cook for 1 minute.
- Simmer
- Add chicken broth and vegetables.
- Return chicken to the pan.
- Bring to a boil, then reduce heat to low.
- Cover and cook for 18–20 minutes until the rice is tender.
- Finish
- Let stand for 5 minutes.
- Fluff with a fork and garnish with parsley.
