Golden chicken, veggie rice,

A colorful, flavorful one-pan meal featuring seasoned chicken, vegetables, and golden rice.

Ingredients (4 servings)

Chicken

  • 500 g (1 lb) boneless chicken thighs or breasts, diced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder

Rice

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 tsp turmeric (for the golden color)
  • 1 cup mixed vegetables (peas, carrots, corn, bell peppers)
  • 2 tbsp chopped parsley (optional)

Instructions

  1. Season the chicken
    • Toss chicken with salt, pepper, paprika, and garlic powder.
  2. Brown the chicken
    • Heat oil in a large skillet or pot over medium-high heat.
    • Cook chicken for 5–6 minutes until lightly golden.
    • Remove and set aside.
  3. Cook the aromatics
    • In the same pan, sauté onion for 3 minutes.
    • Add garlic and cook for 30 seconds.
  4. Toast the rice
    • Stir in rice and turmeric.
    • Cook for 1 minute.
  5. Simmer
    • Add chicken broth and vegetables.
    • Return chicken to the pan.
    • Bring to a boil, then reduce heat to low.
    • Cover and cook for 18–20 minutes until the rice is tender.
  6. Finish
    • Let stand for 5 minutes.
    • Fluff with a fork and garnish with parsley.
