Ingredients
- 4 medium zucchini, sliced into ¼-inch rounds
- 6 slices bacon, cooked and crumbled
- 1½ cups shredded cheddar cheese
- ½ cup sour cream
- 3 green onions, sliced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- ¼ tsp paprika
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Toss the zucchini with olive oil, garlic, salt, pepper, and paprika.
- Spread the zucchini evenly in the baking dish.
- Bake for 15 minutes to remove some excess moisture.
- Remove from the oven and gently drain any liquid if needed.
- Stir in the sour cream, half of the cheddar cheese, half of the bacon, and half of the green onions.
- Top with the remaining cheese and bacon.
- Return to the oven and bake for 15–20 minutes, until bubbly and golden.
- Sprinkle with the remaining green onions before serving.
Tips
- For less moisture, salt the sliced zucchini and let it sit for 20 minutes before baking, then pat dry.
- Add diced jalapeños for a spicy version.
- Substitute Monterey Jack or pepper jack cheese for a different flavor profile.
