Loaded Zucchini Bake

Ingredients

  • 4 medium zucchini, sliced into ¼-inch rounds
  • 6 slices bacon, cooked and crumbled
  • 1½ cups shredded cheddar cheese
  • ½ cup sour cream
  • 3 green onions, sliced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp paprika

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Toss the zucchini with olive oil, garlic, salt, pepper, and paprika.
  3. Spread the zucchini evenly in the baking dish.
  4. Bake for 15 minutes to remove some excess moisture.
  5. Remove from the oven and gently drain any liquid if needed.
  6. Stir in the sour cream, half of the cheddar cheese, half of the bacon, and half of the green onions.
  7. Top with the remaining cheese and bacon.
  8. Return to the oven and bake for 15–20 minutes, until bubbly and golden.
  9. Sprinkle with the remaining green onions before serving.

Tips

  • For less moisture, salt the sliced zucchini and let it sit for 20 minutes before baking, then pat dry.
  • Add diced jalapeños for a spicy version.
  • Substitute Monterey Jack or pepper jack cheese for a different flavor profile.
