Lemon Blueberry Cottage Cheese Protein Bites
These protein bites are tangy, lightly sweet, and packed with protein from cottage cheese.
Ingredients
- 1 cup cottage cheese
- 1 cup rolled oats
- ½ cup vanilla protein powder
- 1 tbsp lemon zest
- 1 tbsp lemon juice
- ½ cup dried blueberries (or fresh blueberries, finely chopped)
- 1–2 tbsp honey or maple syrup (optional)
Instructions
- Blend the cottage cheese until smooth.
- In a mixing bowl, combine the blended cottage cheese, oats, protein powder, lemon zest, lemon juice, and blueberries.
- Mix until a dough-like consistency forms.
- Refrigerate for 15–20 minutes if the mixture is too soft.
- Roll into 1-inch (2.5 cm) balls.
- Chill for at least 30 minutes before serving.
