These hearty cookies are loaded with oats, chocolate chips, and pecans, making them chewy, crunchy, and perfect for sharing.

Ingredients (Makes about 24 cookies)

  • 1 cup (225 g) unsalted butter, softened
  • 1 cup (200 g) brown sugar
  • 1 cup (200 g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 tsp ground cinnamon
  • 2 cups rolled oats
  • 1½ cups chocolate chips
  • 1 cup chopped pecans
  • 1 cup shredded coconut (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line baking sheets with parchment paper.
  3. Cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then add the vanilla.
  5. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  6. Gradually mix the dry ingredients into the wet ingredients.
  7. Stir in the oats, chocolate chips, pecans, and coconut (if using).
  8. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  9. Bake for 10–12 minutes, or until the edges are golden brown.
  10. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Tips

  • For extra-chewy cookies, slightly underbake them.
  • Toast the pecans before adding for deeper flavor.
  • Store in an airtight container for up to 5 days.
