Cheesy Cauliflower Bites
These cheesy cauliflower bites are crispy on the outside, tender on the inside, and make a great snack, appetizer, or side dish.
Ingredients (Makes 20–24 bites)
- 4 cups cauliflower florets
- 1 cup shredded cheddar cheese
- ¼ cup grated Parmesan cheese
- 1 large egg, beaten
- ½ cup breadcrumbs (regular, panko, or gluten-free)
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Steam or microwave the cauliflower until tender, about 5–7 minutes.
- Let cool slightly, then finely chop or pulse in a food processor.
- Place the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
- In a bowl, combine the cauliflower, cheddar, Parmesan, egg, breadcrumbs, garlic powder, onion powder, salt, and pepper.
- Mix until well combined.
- Form the mixture into small balls or tots and place on a parchment-lined baking sheet.
- Bake for 20–25 minutes, turning once halfway through, until golden brown.
- Serve warm.

- Cook at 375°F (190°C) for 10–12 minutes, shaking or turning halfway through.
