Cheesy Cauliflower Bites

These cheesy cauliflower bites are crispy on the outside, tender on the inside, and make a great snack, appetizer, or side dish.

Ingredients (Makes 20–24 bites)

  • 4 cups cauliflower florets
  • 1 cup shredded cheddar cheese
  • ¼ cup grated Parmesan cheese
  • 1 large egg, beaten
  • ½ cup breadcrumbs (regular, panko, or gluten-free)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Steam or microwave the cauliflower until tender, about 5–7 minutes.
  3. Let cool slightly, then finely chop or pulse in a food processor.
  4. Place the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
  5. In a bowl, combine the cauliflower, cheddar, Parmesan, egg, breadcrumbs, garlic powder, onion powder, salt, and pepper.
  6. Mix until well combined.
  7. Form the mixture into small balls or tots and place on a parchment-lined baking sheet.
  8. Bake for 20–25 minutes, turning once halfway through, until golden brown.
  9. Serve warm.

Air Fryer Option

  • Cook at 375°F (190°C) for 10–12 minutes, shaking or turning halfway through.

Serving Ideas

  • Ranch dressing
  • Marinara sauce
  • Garlic aioli
  • Sour cream

Tips

  • Removing excess moisture from the cauliflower is the key to getting crispy bites.
  • Add chopped chives or parsley for extra flavor.
  • Use pepper jack cheese for a spicier version.
