Sausage, Mustard Mash, Peas and Onion Gravy 😋

Ingredients (Serves 4)
Sausages
- 8 pork sausages
- 1 tbsp oil
Mustard Mash
- 2 lb (900 g) potatoes, peeled and cubed
- ¼ cup (60 g) butter
- ½ cup (120 ml) milk
- 1–2 tbsp wholegrain or Dijon mustard
- Salt and pepper to taste
Peas
- 2 cups frozen peas
Onion Gravy
- 2 large onions, thinly sliced
- 1 tbsp butter
- 1 tbsp flour
- 2 cups beef or chicken stock
- 1 tsp Worcestershire sauce
- Salt and pepper to taste
Instructions
- Boil the potatoes until tender, about 15–20 minutes.
- Meanwhile, cook the sausages in a skillet with the oil over medium heat until browned and cooked through, about 12–15 minutes.
- For the gravy, melt the butter and cook the onions over medium-low heat until deeply golden and caramelized, about 15 minutes.
- Stir in the flour and cook for 1 minute.
- Gradually whisk in the stock and Worcestershire sauce. Simmer until thickened.
- Drain the potatoes and mash with the butter, milk, mustard, salt, and pepper.
- Cook the peas according to package directions.
- Serve the sausages on a bed of mustard mash, add peas on the side, and generously spoon over the onion gravy.
Tips
- Use Cumberland or other good-quality pork sausages for authentic flavor.
- Wholegrain mustard adds texture, while Dijon gives a smoother finish.
- For extra-rich gravy, add a splash of dark ale while simmering.
