Homemade Mexican migas Recipe

Mexican Migas is a delicious, comforting breakfast made with crispy tortilla strips, fluffy scrambled eggs, fresh vegetables, and cheese. This traditional dish is quick, affordable, and packed with authentic Mexican flavor.

Ingredients

  • 6 corn tortillas, cut into strips or small pieces
  • 6 large eggs
  • 2 tablespoons milk
  • 2 tablespoons vegetable oil
  • 1 medium tomato, diced
  • ½ medium onion, finely chopped
  • 1 jalapeño, seeded and diced (optional)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded cheddar, Monterey Jack, or queso fresco
  • 2 tablespoons chopped fresh cilantro

Optional Toppings

  • Sliced avocado
  • Salsa
  • Sour cream
  • Pico de gallo
  • Hot sauce
  • Lime wedges

Instructions

Step 1: Fry the Tortillas

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the tortilla strips and fry until golden brown and crispy, about 4–5 minutes.
  3. Transfer to a paper towel-lined plate.

Step 2: Prepare the Eggs

  1. In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.

Step 3: Cook the Vegetables

  1. In the same skillet, remove excess oil if necessary.
  2. Add the onion and jalapeño and cook for 2–3 minutes until softened.
  3. Stir in the diced tomato and cook for another minute.

Step 4: Scramble the Eggs

  1. Reduce heat to medium-low.
  2. Pour the egg mixture into the skillet.
  3. Stir gently as the eggs begin to set.

Step 5: Combine

  1. When the eggs are mostly cooked but still slightly soft, add the crispy tortilla strips.
  2. Fold everything together gently.
  3. Sprinkle the cheese over the top and cook for 1–2 minutes until melted.

Step 6: Serve

  1. Remove from heat and garnish with fresh cilantro.
  2. Top with avocado, salsa, sour cream, or your favorite toppings.
  3. Serve immediately with refried beans, breakfast potatoes, or fresh fruit.

Tips for the Best Migas

  • Slightly stale corn tortillas work best because they crisp up beautifully.
  • Don’t overcook the eggs—they should remain soft and fluffy.
  • Add cooked chorizo, bacon, or shredded chicken for a heartier meal.
  • Use pepper jack cheese for a little extra spice.

Storage

Migas are best enjoyed fresh, but leftovers can be refrigerated for up to 2 days. Reheat gently in a skillet over low heat.
