Salmon Patties

These old-fashioned salmon patties are a budget-friendly classic that comes together in minutes. Made with canned salmon, simple pantry ingredients, and savory seasonings, they’re golden brown, flavorful, and perfect for a quick weeknight meal.

Ingredients

  • 2 (14.75-ounce) cans salmon, drained
  • 2 large eggs, beaten
  • ½ cup finely chopped onion
  • ½ cup breadcrumbs or crushed saltine crackers
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional)
  • 2–3 tablespoons vegetable oil for frying

Instructions

Step 1: Prepare the Salmon

  1. Drain the canned salmon thoroughly.
  2. Remove any large bones or skin if desired (the soft bones are edible and rich in calcium).
  3. Flake the salmon into a large mixing bowl.

Step 2: Make the Patty Mixture

  1. Add the eggs, onion, breadcrumbs, mayonnaise, lemon juice, mustard, garlic powder, paprika, salt, pepper, and parsley.
  2. Mix until everything is well combined.
  3. If the mixture feels too wet, add a little more breadcrumbs.

Step 3: Form the Patties

  1. Divide the mixture into 8 equal portions.
  2. Shape each portion into a patty about ½ inch thick.
  3. Place the patties on a plate and refrigerate for 15–20 minutes to help them hold together.

Step 4: Fry the Patties

  1. Heat the oil in a large skillet over medium heat.
  2. Carefully add the patties without overcrowding the pan.
  3. Cook for 4–5 minutes per side, or until golden brown and crispy.
  4. Transfer to a paper towel-lined plate.

Serving Suggestions

These salmon patties pair wonderfully with:

  • Creamy mashed potatoes
  • Coleslaw
  • Macaroni salad
  • Steamed vegetables
  • Cornbread
  • Fresh garden salad

Serve with tartar sauce, remoulade, ranch dressing, or a squeeze of fresh lemon juice.

Tips for Perfect Salmon Patties

  • Chill the patties before frying to prevent them from falling apart.
  • Use crushed buttery crackers for extra flavor.
  • Add finely diced bell peppers or celery for added texture.
  • For a healthier version, bake at 400°F (200°C) for 15–18 minutes, flipping halfway through.

Storage

  • Refrigerate leftovers in an airtight container for up to 3 days.
  • Freeze cooked patties for up to 2 months.
  • Reheat in a skillet or air fryer to restore crispiness.
