Tater Tot Breakfast Casserole

Ingredients

  • 1 (32-ounce) bag frozen tater tots
  • 1 pound breakfast sausage, cooked and crumbled
  • 8 large eggs
  • 2 cups shredded cheddar cheese
  • 1 cup mozzarella cheese, shredded
  • 1 cup milk
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 green onions, sliced (optional)

Instructions

Step 1: Prepare the Baking Dish

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish.

Step 2: Cook the Sausage

  1. In a skillet over medium heat, cook the sausage until browned.
  2. Drain any excess grease and set aside.

Step 3: Assemble the Casserole

  1. Spread the frozen tater tots evenly in the prepared baking dish.
  2. Sprinkle the cooked sausage over the tater tots.
  3. Top with the cheddar and mozzarella cheeses.

Step 4: Make the Egg Mixture

  1. In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper.
  2. Pour the mixture evenly over the casserole.

Step 5: Bake

  1. Bake uncovered for 40–45 minutes, or until the eggs are set and the top is golden brown.
  2. Let the casserole rest for 5–10 minutes before serving.

Step 6: Serve

  1. Garnish with sliced green onions if desired.
  2. Serve warm with fresh fruit, toast, or your favorite breakfast sides.

Tips

  • Add diced bell peppers, onions, or mushrooms for extra flavor.
  • Substitute bacon or ham for the sausage.
  • Pepper Jack cheese adds a delicious spicy kick.
  • Assemble the casserole the night before and refrigerate until ready to bake.
