Cheese And Onion Enchiladas

These cheese and onion enchiladas are warm, comforting, and packed with melty cheese, sweet sautéed onions, and rich enchilada sauce. Perfect for an easy weeknight dinner.

Ingredients

Filling

  • 2 large onions, thinly sliced
  • 2 tbsp butter or oil
  • 2 cups shredded cheddar or Mexican cheese blend
  • Salt & black pepper

Enchiladas

  • 8 flour or corn tortillas
  • 2 cups enchilada sauce
  • Extra cheese for topping

Optional Toppings

  • Sour cream
  • Fresh cilantro
  • Jalapeños
  • Avocado slices
  • Green onions

Instructions

1. Cook the Onions

  1. Heat butter or oil in a skillet.
  2. Cook onions over medium heat until soft and lightly caramelized.
  3. Season with salt and pepper.

2. Fill the Tortillas

  1. Spread a little enchilada sauce in a baking dish.
  2. Fill each tortilla with onions and cheese.
  3. Roll tightly and place seam-side down in the dish.

3. Add Sauce & Cheese

  1. Pour remaining enchilada sauce over the enchiladas.
  2. Sprinkle generously with extra cheese.

4. Bake

  • Bake at 190°C (375°F) for 20–25 minutes until bubbly and golden.
