These cheese and onion enchiladas are warm, comforting, and packed with melty cheese, sweet sautéed onions, and rich enchilada sauce. Perfect for an easy weeknight dinner.
Ingredients
Filling
- 2 large onions, thinly sliced
- 2 tbsp butter or oil
- 2 cups shredded cheddar or Mexican cheese blend
- Salt & black pepper
Enchiladas
- 8 flour or corn tortillas
- 2 cups enchilada sauce
- Extra cheese for topping
Optional Toppings
- Sour cream
- Fresh cilantro
- Jalapeños
- Avocado slices
- Green onions
Instructions
1. Cook the Onions
- Heat butter or oil in a skillet.
- Cook onions over medium heat until soft and lightly caramelized.
- Season with salt and pepper.
2. Fill the Tortillas
- Spread a little enchilada sauce in a baking dish.
- Fill each tortilla with onions and cheese.
- Roll tightly and place seam-side down in the dish.
3. Add Sauce & Cheese
- Pour remaining enchilada sauce over the enchiladas.
- Sprinkle generously with extra cheese.
4. Bake
- Bake at 190°C (375°F) for 20–25 minutes until bubbly and golden.
