Ingredients
- 4 boneless skinless chicken breasts or thighs
- Salt & black pepper
- 1 tsp paprika
- 2 tbsp olive oil
- 2 tbsp butter
- 8 oz mushrooms, sliced
- 4 garlic cloves, minced
- 1 cup chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Fresh parsley for garnish
Instructions
1. Season the Chicken
Pat chicken dry and season with salt, pepper, and paprika.
2. Sear
Heat olive oil in a large skillet over medium-high heat.
Cook chicken about 5–6 minutes per side until golden and cooked through. Remove and set aside.
3. Cook the Mushrooms
Reduce heat to medium.
Add butter and mushrooms. Cook until browned and tender, about 6–8 minutes.
Stir in garlic and cook 30 seconds.
4. Make the Sauce
Pour in chicken broth and scrape up browned bits from the skillet.
Add heavy cream, Parmesan, and Italian seasoning. Simmer until slightly thickened.
5. Smother the Chicken
Return chicken to the skillet and spoon sauce over top.
Simmer 3–5 minutes until everything is hot and coated in the creamy sauce.
