For the Salmon Bites
- 1½ lb salmon, skin removed and cut into cubes
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp cayenne (optional)
- Salt & black pepper
- 1 tbsp butter
- Lemon wedges for serving
For the Dirty Rice
- 1 cup long-grain rice
- 2 cups chicken broth
- ½ lb ground sausage or turkey
- 1 small onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 2 garlic cloves, minced
- 1 tsp Cajun seasoning
Instructions
1. Cook the Dirty Rice
Brown sausage in a skillet.
Add onion, bell pepper, celery, and garlic. Cook until softened.
Stir in rice and Cajun seasoning.
Add broth, cover, and simmer until rice is tender.
2. Cook the Salmon
Season salmon cubes with spices.
Heat olive oil in a skillet over medium-high heat.
Cook salmon bites 2–3 minutes per side until crisp outside and tender inside.
Finish with butter in the pan for extra richness.
3. Assemble
Spoon dirty rice into bowls.
Top with salmon bites and fresh lemon juice.
