Ingredients

For the Pound Cake

  • 3 egg yolks
  • 1/2 cup butter
  • 1 teaspoon vanilla extract
  • 1 1/2 cups shredded coconut
  • 1 cup chopped pecans

Instructions

1. Make the Cake Batter

  1. Preheat oven to 325°F (165°C). Grease pan well.
  2. Cream butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well.
  4. Stir in vanilla extract.
  5. In a separate bowl, mix flour, cocoa powder, baking powder, and salt.
  6. Alternate adding dry ingredients and buttermilk into the butter mixture. Mix until smooth.

2. Bake

  1. Pour batter into prepared pan.
  2. Bake for 60–75 minutes or until a toothpick comes out clean.
  3. Let cool completely before frosting.

3. Make Coconut-Pecan Frosting

  1. In a saucepan, combine evaporated milk, sugar, egg yolks, and butter.
  2. Cook over medium heat, stirring constantly until thickened.
  3. Remove from heat and stir in vanilla, coconut, and pecans.
  4. Let frosting cool until spreadable.

4. Assemble

  1. Spread frosting over cooled cake.
  2. Slice and serve.
