Ingredients
Cake Layers
- 2½ cups all-purpose flour
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 cup unsalted butter, softened
- 1¾ cups granulated sugar
- 4 eggs
- 1 tbsp culinary lavender, finely crushed
- 1 tsp vanilla extract
- 1 cup buttermilk
- 1½ cups fresh blueberries
- 1 tbsp flour (for coating blueberries)
Blueberry Filling
- 1½ cups blueberries
- ¼ cup sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch + 1 tbsp water
Lavender Cream Cheese Frosting
- 16 oz cream cheese, softened
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 tsp vanilla
- 1–2 tsp culinary lavender syrup or finely crushed lavender
- Optional purple food coloring
Instructions
Make the Blueberry Filling
- Combine blueberries, sugar, and lemon juice in a saucepan.
- Simmer until berries burst.
- Stir in cornstarch slurry and cook until thickened.
- Cool completely.
Make the Cake
- Preheat oven to 350°F (175°C).
Grease and line two or three cake pans. - Whisk together:
- flour
- baking powder
- baking soda
- salt
- Cream butter and sugar until fluffy.
- Add eggs one at a time.
- Mix in lavender and vanilla.
- Alternate adding dry ingredients and buttermilk.
- Toss blueberries with 1 tbsp flour and fold gently into batter.
- Divide batter evenly into pans.
- Bake for 25–32 minutes until a toothpick comes out clean.
- Cool completely.
Make the Frosting
Beat cream cheese and butter until smooth. Add powdered sugar gradually, then vanilla and lavender flavoring.
Assemble
- Place first cake layer on serving plate.
- Pipe a frosting border and spread blueberry filling inside.
- Add next layer and repeat.
- Frost outside of cake.
- Chill before serving.
