Blueberry Lavender Layer Cake

A soft, elegant cake with juicy blueberries and delicate lavender flavor, layered with silky blueberry cream cheese frosting.

Ingredients

Cake Layers

  • 2½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 1¾ cups granulated sugar
  • 4 eggs
  • 1 tbsp culinary lavender, finely crushed
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1½ cups fresh blueberries
  • 1 tbsp flour (for coating blueberries)

Blueberry Filling

  • 1½ cups blueberries
  • ¼ cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch + 1 tbsp water

Lavender Cream Cheese Frosting

  • 16 oz cream cheese, softened
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 tsp vanilla
  • 1–2 tsp culinary lavender syrup or finely crushed lavender
  • Optional purple food coloring

Instructions

Make the Blueberry Filling

  1. Combine blueberries, sugar, and lemon juice in a saucepan.
  2. Simmer until berries burst.
  3. Stir in cornstarch slurry and cook until thickened.
  4. Cool completely.

Make the Cake

  1. Preheat oven to 350°F (175°C).
    Grease and line two or three cake pans.
  2. Whisk together:
    • flour
    • baking powder
    • baking soda
    • salt
  3. Cream butter and sugar until fluffy.
  4. Add eggs one at a time.
  5. Mix in lavender and vanilla.
  6. Alternate adding dry ingredients and buttermilk.
  7. Toss blueberries with 1 tbsp flour and fold gently into batter.
  8. Divide batter evenly into pans.
  9. Bake for 25–32 minutes until a toothpick comes out clean.
  10. Cool completely.

Make the Frosting

Beat cream cheese and butter until smooth. Add powdered sugar gradually, then vanilla and lavender flavoring.


Assemble

  1. Place first cake layer on serving plate.
  2. Pipe a frosting border and spread blueberry filling inside.
  3. Add next layer and repeat.
  4. Frost outside of cake.
  5. Chill before serving.

Garnish Ideas

  • Fresh blueberries
  • Sprigs of lavender
  • Lemon zest
  • White chocolate shavings

Tips

  • Use culinary lavender only — ornamental lavender may taste bitter.
  • Don’t overmix blueberries into the batter or the cake may turn gray-purple.
  • Chill layers before frosting for cleaner assembly.
