CAJUN SHRIMP FRIED RICE 🍤

Bold, smoky Cajun flavors combined with juicy shrimp, vegetables, eggs, and perfectly seasoned fried rice.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 4 cups cooked cold rice (day-old works best)
  • 2 tbsp olive oil or butter
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 garlic cloves, minced
  • 2 eggs, beaten
  • 1 cup frozen peas and carrots
  • 3 green onions, sliced

Cajun Seasoning

  • 1½ tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp cayenne pepper
  • ½ tsp dried thyme
  • ½ tsp oregano
  • Salt and black pepper, to taste

Sauce

  • 2 tbsp soy sauce
  • 1 tsp Worcestershire sauce
  • 1 tsp hot sauce (optional)

Instructions

  1. Toss shrimp with half of the Cajun seasoning.
  2. Heat 1 tbsp oil in a large skillet or wok over medium-high heat.
  3. Cook shrimp for 1–2 minutes per side until pink and cooked through.
    Remove and set aside.
  4. Add remaining oil to skillet.
  5. Cook onion and bell pepper until softened.
  6. Stir in garlic, peas, and carrots.
  7. Push vegetables to one side and scramble eggs on the other side of the pan.
  8. Add cold rice and remaining Cajun seasoning.
  9. Stir-fry for several minutes until rice is heated and slightly crisp.
  10. Stir in:
  • soy sauce
  • Worcestershire sauce
  • hot sauce
  1. Return shrimp to skillet and toss everything together.
  2. Top with green onions and serve hot.

  • Andouille sausage
  • Corn
  • Jalapeños
  • Extra butter for richer flavor

Tips

  • Cold rice prevents mushy fried rice.
  • Use high heat for the best texture.
  • Pat shrimp dry before cooking for better searing.
