Bold, smoky Cajun flavors combined with juicy shrimp, vegetables, eggs, and perfectly seasoned fried rice.
Ingredients
- 1 lb shrimp, peeled and deveined
- 4 cups cooked cold rice (day-old works best)
- 2 tbsp olive oil or butter
- 1 small onion, diced
- 1 bell pepper, diced
- 2 garlic cloves, minced
- 2 eggs, beaten
- 1 cup frozen peas and carrots
- 3 green onions, sliced
Cajun Seasoning
- 1½ tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp cayenne pepper
- ½ tsp dried thyme
- ½ tsp oregano
- Salt and black pepper, to taste
Sauce
- 2 tbsp soy sauce
- 1 tsp Worcestershire sauce
- 1 tsp hot sauce (optional)
Instructions
- Toss shrimp with half of the Cajun seasoning.
- Heat 1 tbsp oil in a large skillet or wok over medium-high heat.
- Cook shrimp for 1–2 minutes per side until pink and cooked through.
Remove and set aside. - Add remaining oil to skillet.
- Cook onion and bell pepper until softened.
- Stir in garlic, peas, and carrots.
- Push vegetables to one side and scramble eggs on the other side of the pan.
- Add cold rice and remaining Cajun seasoning.
- Stir-fry for several minutes until rice is heated and slightly crisp.
- Stir in:
- soy sauce
- Worcestershire sauce
- hot sauce
- Return shrimp to skillet and toss everything together.
- Top with green onions and serve hot.
