Fried Rabbit

Ingredients

  • 1 rabbit, cut into serving pieces
  • 2 cups buttermilk
  • 2 cups flour
  • Salt
  • Black pepper
  • Paprika
  • Garlic powder
  • Cayenne (optional)
  • Oil or lard for frying

Method

  1. Soak rabbit pieces in buttermilk for 4–12 hours.
  2. Mix flour with seasonings.
  3. Dredge rabbit pieces thoroughly.
  4. Fry at medium heat until golden brown and cooked through (rabbit is lean, so avoid overly high heat).
  5. Rest briefly before serving.

Rabbit is leaner than chicken, with a slightly sweet, gamey flavor. Many cooks pair it with gravy, mashed potatoes, hot sauce, or biscuits.
