Classic Fried Vidalia Onion Rings
Ingredients
- 2 large Vidalia onions
- 1½ cups flour
- ½ cup cornstarch
- 1 tsp baking powder
- 1 tsp salt
- 1 tsp paprika
- ½ tsp black pepper
- 1 egg
- 1 cup cold sparkling water or beer
- Oil for frying
Instructions
- Slice onions into thick rings and separate them.
- Heat oil to about 350°F (175°C).
- Mix dry ingredients.
- Whisk egg with sparkling water/beer, then combine with dry mix into a light batter.
- Dip onion rings into batter.
- Fry in batches until deep golden brown.
- Drain on a rack or paper towels.
For Extra Crispiness
- Chill the batter before frying.
- Use cornstarch in the coating.
- Don’t overcrowd the fryer.
