Fried Vidalia Onion Rings

Classic Fried Vidalia Onion Rings

Ingredients

  • 2 large Vidalia onions
  • 1½ cups flour
  • ½ cup cornstarch
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp paprika
  • ½ tsp black pepper
  • 1 egg
  • 1 cup cold sparkling water or beer
  • Oil for frying

Instructions

  1. Slice onions into thick rings and separate them.
  2. Heat oil to about 350°F (175°C).
  3. Mix dry ingredients.
  4. Whisk egg with sparkling water/beer, then combine with dry mix into a light batter.
  5. Dip onion rings into batter.
  6. Fry in batches until deep golden brown.
  7. Drain on a rack or paper towels.

For Extra Crispiness

  • Chill the batter before frying.
  • Use cornstarch in the coating.
  • Don’t overcrowd the fryer.

  • Ranch
  • Cajun remoulade
  • Spicy mayo
  • Honey mustard
  • BBQ sauce

A popular Southern-style seasoning blend includes paprika, cayenne, garlic powder, and black pepper for a little heat with the sweetness of the onions.
