Cowboy Meatloaf and Potato Casserole
A hearty layered casserole with seasoned meatloaf on the bottom and creamy potatoes baked on top. Comfort food with a rustic “cowboy dinner” feel.
Ingredients
Meatloaf layer
- 1½ lb (680 g) ground beef
- 1 cup breadcrumbs
- 1 egg
- ½ onion, diced
- 2 cloves garlic, minced
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- Salt and black pepper
Potato topping
- 4 cups mashed potatoes
- 1 cup shredded cheddar cheese
- 2 tbsp butter
- ¼ cup milk
- Salt and pepper
Optional toppings
- Crumbled bacon
- Green onions
- Extra cheese
Instructions
1. Prepare the meatloaf
Preheat oven to 375°F (190°C).
Mix all meatloaf ingredients in a bowl until combined.
Press evenly into a greased baking dish.
