Ingredients (Serves 4)
- 4 boneless skinless chicken breasts
- 8 slices bacon
- 4 oz cream cheese, softened
- 1 cup shredded mozzarella or cheddar cheese
- 1 cup spinach, chopped
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and black pepper
- 1 tbsp olive oil
Instructions
- Preheat oven
Heat oven to 400°F (200°C).
- Prepare the filling
In a bowl, mix cream cheese, shredded cheese, spinach, garlic powder, salt, and pepper.
- Stuff the chicken
Cut a pocket into each chicken breast. Fill with the cheese mixture.
- Wrap with bacon
Wrap 2 slices of bacon around each stuffed chicken breast. Secure with toothpicks if needed.
- Season
Rub lightly with olive oil and sprinkle paprika over the top.
- Bake
Place in a baking dish and bake for 30–40 minutes, until the chicken reaches 165°F (74°C).
- Optional crisp finish
Broil for 2–3 minutes at the end for crispier bacon.

Tips
- Don’t overstuff the chicken or the filling may leak out.
- Thin-cut bacon crisps more easily.
