Blueberry Lavender Layer Cake

A soft, elegant cake infused with delicate lavender and juicy blueberries, layered with luscious blueberry filling and creamy frosting.

Ingredients

Cake Layers

  • 2½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 1¾ cups granulated sugar
  • 4 large eggs
  • 1 tbsp culinary lavender, finely crushed
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1½ cups fresh blueberries
  • 1 tbsp flour (for coating blueberries)

Blueberry Filling

  • 1½ cups blueberries
  • ¼ cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch + 1 tbsp water

Lavender Cream Cheese Frosting

  • 16 oz cream cheese, softened
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract
  • 1–2 tsp lavender syrup or finely crushed culinary lavender
  • Optional purple food coloring

Instructions

Make the Blueberry Filling

  1. Combine blueberries, sugar, and lemon juice in a saucepan.
  2. Simmer until berries burst and become juicy.
  3. Stir in cornstarch slurry and cook until thickened.
  4. Cool completely.

Make the Cake

  1. Preheat oven to 350°F (175°C).
    Grease and line two or three cake pans.
  2. In a bowl, whisk together:
    • flour
    • baking powder
    • baking soda
    • salt
  3. Cream butter and sugar until light and fluffy.
  4. Add eggs one at a time.
  5. Mix in lavender and vanilla.
  6. Alternate adding dry ingredients and buttermilk.
  7. Toss blueberries with flour and gently fold into batter.
  8. Divide batter evenly between pans.
  9. Bake for 25–32 minutes until a toothpick comes out clean.
  10. Cool completely.

Make the Frosting

  1. Beat cream cheese and butter until smooth and fluffy.
  2. Add powdered sugar gradually.
  3. Mix in vanilla and lavender flavoring.

Assemble the Cake

  1. Place one cake layer on serving plate.
  2. Pipe a frosting border and spread blueberry filling inside.
  3. Add next layer and repeat if using three layers.
  4. Frost the outside of the cake.
  5. Chill before serving.

Garnish Ideas

  • Fresh blueberries
  • Lavender sprigs
  • Lemon zest
  • White chocolate curls

Tips

  • Use culinary lavender only.
  • Don’t overmix the blueberries into the batter.
  • Chilling the cake helps the layers set beautifully.
