Cheesy Scalloped Potatoes are a rich, creamy, and comforting side dish made with thinly sliced potatoes baked in a cheesy garlic cream sauce. Perfect for holidays, Sunday dinners, or pairing with any meat dish.

Ingredients

  • 4–5 large potatoes (thinly sliced)
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk (warm)
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1/2 cup parmesan cheese
  • 3 cloves garlic (minced)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon thyme (optional)

Ingredient Notes

  • Yukon gold or russet potatoes work best.
  • Slice potatoes evenly for even cooking.
  • Freshly shredded cheese melts smoother than pre-shredded.

Instructions

1. Prepare Sauce

  1. Melt butter in a saucepan over medium heat.
  2. Add garlic and cook for 1 minute.
  3. Stir in flour and cook for 1–2 minutes.
  4. Slowly whisk in milk and cream until smooth.
  5. Add salt, pepper, paprika, and thyme.
  6. Simmer until slightly thickened.
  7. Stir in 1 1/2 cups cheddar cheese and half parmesan until melted.

2. Assemble

  1. Preheat oven to 375°F (190°C).
  2. Layer sliced potatoes in a greased baking dish.
  3. Pour cheese sauce evenly over potatoes.
  4. Sprinkle remaining cheddar and parmesan on top.

3. Bake

  1. Cover with foil and bake for 40 minutes.
  2. Remove foil and bake another 15–20 minutes until golden and bubbly.

4. Serve

  1. Let rest for 10 minutes before serving for best texture.
