Chicken salad

Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1/2 cup mayonnaise
  • 1 celery stalk, finely chopped
  • 1/4 cup red onion, finely diced
  • 1 tbsp lemon juice
  • Salt and black pepper to taste

Optional Add-Ins

  • Grapes or dried cranberries
  • Chopped pecans or almonds
  • Fresh dill or parsley
  • Dijon mustard

Instructions

  1. Prepare the chicken
    Use cooked chicken breast, rotisserie chicken, or leftover chicken.
  2. Mix ingredients
    In a large bowl, combine chicken, mayonnaise, celery, onion, lemon juice, salt, and pepper.
  3. Add extras if desired
    Stir in grapes, nuts, herbs, or mustard for extra flavor and texture.
  4. Chill
    Refrigerate for at least 30 minutes before serving.
  5. Serve
    Enjoy:

    • On sandwiches or croissants
    • In lettuce wraps
    • With crackers
    • Over a green salad

Tips

  • Greek yogurt can replace part of the mayonnaise for a lighter version.
  • Finely diced ingredients give the best texture.
  • Tastes even better after chilling for a few hours.
