These Crispy Chicken Bites are crunchy on the outside, juicy on the inside, and packed with flavor. Perfect for snacks, appetizers, lunch, or dinner, they’re easy to make and taste better than takeout.

Ingredients

For the Chicken

  • 2 boneless chicken breasts, cut into bite-sized cubes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder (optional)
  • 1 tablespoon hot sauce (optional)

For the Crispy Coating

  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt

Wet Mixture

  • 1 large egg
  • 1/2 cup milk or buttermilk

For Frying

  • Vegetable oil or canola oil

Instructions

Step 1: Prepare the Chicken

Place the chicken cubes in a large bowl. Add salt, black pepper, garlic powder, onion powder, paprika, chili powder, and hot sauce.

Mix everything well until the chicken is fully coated with seasoning.

Let it marinate for:

  • 15 minutes for quick flavor
  • 1 hour for deeper flavor

Step 2: Make the Crispy Coating

In another bowl, combine:

  • Flour
  • Cornstarch
  • Baking powder
  • Paprika
  • Garlic powder
  • Salt

Mix thoroughly.

Why Use Cornstarch?

Cornstarch helps create a lighter and crispier texture.


Step 3: Prepare the Wet Mixture

In a separate bowl, whisk together:

  • Egg
  • Milk or buttermilk

This helps the coating stick properly to the chicken.


Step 4: Coat the Chicken

  1. Dip chicken pieces into the wet mixture.
  2. Coat them in the flour mixture.
  3. Press the coating firmly onto each piece.
  4. For extra crunch:
    • Dip again into the wet mixture
    • Coat again in flour mixture

Place coated chicken on a tray and let it rest for 5 minutes before frying.


Frying Instructions

Step 5: Heat the Oil

Fill a deep frying pan or pot with oil.

Heat oil to medium-high heat (about 350°F / 175°C).

Tip

  • If oil is too hot, the coating burns quickly.
  • If oil is too cold, the chicken absorbs excess oil.

Step 6: Fry the Chicken

Carefully place chicken pieces into the hot oil.

Do not overcrowd the pan.

Fry each batch for 4–6 minutes or until:

  • Golden brown
  • Crispy outside
  • Fully cooked inside

Remove and place on paper towels or a wire rack.


Air Fryer Method

  1. Preheat air fryer to 200°C (400°F).
  2. Spray chicken lightly with oil.
  3. Arrange in a single layer.
  4. Cook for 10–12 minutes.
  5. Flip halfway through cooking.

Oven-Baked Method

  1. Preheat oven to 220°C (425°F).
  2. Place chicken on a lined baking tray.
  3. Spray lightly with oil.
  4. Bake for 18–22 minutes, flipping halfway.

Storage & Reheating

Refrigerate

Store leftovers in an airtight container for up to 3 days.

Reheat

  • Air fryer: 3–4 minutes at 180°C
  • Oven: 8 minutes at 200°C

Avoid microwaving if you want to keep them crispy.
