Ingredients
- 2 large cucumbers, peeled and chopped
- 1 cup freshly squeezed lemon juice (about 4–6 lemons)
- ¾ to 1 cup sugar or honey, to taste
- 4 cups cold water
- 2 cups ice
- Lemon slices and cucumber rounds, for garnish
- Fresh mint leaves (optional)
Instructions
- Blend the chopped cucumbers with 1 cup of the water until smooth.
- Strain through a fine-mesh sieve into a large pitcher, pressing to extract as much liquid as possible.
- Add the lemon juice and sugar (or honey), stirring until dissolved.
- Pour in the remaining water and mix well.
- Taste and adjust sweetness if needed.
- Add ice and chill for at least 30 minutes before serving.
- Garnish with lemon slices, cucumber rounds, and fresh mint.
Tips
- For a smoother drink, strain the cucumber puree twice.
- Replace part of the water with sparkling water for a fizzy version.
- Add a few mint leaves while blending for extra freshness.
