A rich, comforting meal with juicy garlic-butter shrimp served over creamy Parmesan rice. Fast enough for weeknights, but it tastes restaurant-worthy.
🧾 Ingredients
For the shrimp
- 1 lb large shrimp, peeled & deveined
- 2 tbsp butter
- 4 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp paprika
- Salt & black pepper to taste
- Optional: red pepper flakes, lemon juice, parsley
For the creamy Parmesan rice
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 tbsp butter
- ½ cup heavy cream or milk
- ¾ cup grated Parmesan cheese
- Salt & pepper to taste
👩🍳 Instructions
1. Cook the rice
In a saucepan, bring chicken broth and butter to a boil. Add rice, cover, and simmer until tender (about 15–18 minutes).
Once cooked, stir in cream and Parmesan cheese until creamy. Season to taste.
2. Cook the shrimp
Pat shrimp dry and season with paprika, salt, and pepper.
Heat olive oil and butter in a skillet over medium-high heat. Add shrimp and cook 1–2 minutes per side until pink.
Add garlic during the last minute and stir until fragrant. Finish with a squeeze of lemon juice if desired.
3. Assemble
Spoon creamy Parmesan rice into bowls and top with garlic butter shrimp. Garnish with parsley and extra Parmesan.
