Hillbilly Pie

A classic Southern-style dessert, Hillbilly Pie is rich, sweet, and packed with coconut, pecans, and a creamy filling. It’s an easy no-fuss pie that’s perfect for family gatherings, potlucks, or holiday tables.

Ingredients

For the Filling

  • 1 (8 oz) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 (8 oz) container whipped topping, thawed

For the Pie

  • 1 prepared graham cracker crust (9-inch)
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans
  • ½ cup chocolate chips

Topping

  • Extra whipped topping
  • Additional pecans and coconut for garnish

Instructions

  1. In a large mixing bowl, beat the cream cheese until smooth.
  2. Add powdered sugar and vanilla extract, mixing until well combined.
  3. Fold in the whipped topping until light and fluffy.
  4. Stir in the coconut, pecans, and chocolate chips.
  5. Spoon the mixture into the graham cracker crust and spread evenly.
  6. Refrigerate for at least 4 hours, or overnight, until firm.
  7. Before serving, top with extra whipped topping, pecans, and coconut.

Tips

  • Toast the pecans and coconut for extra flavor.
  • Drizzle with caramel or chocolate sauce for a richer dessert.
  • Keep refrigerated until ready to serve.

Store covered in the refrigerator for up to 4 days.
