Loaded Beef Taco Tater Tot Casserole

A hearty, cheesy family favorite packed with seasoned taco beef, crispy tater tots, and plenty of melted cheese. Perfect for busy weeknights, potlucks, or game-day gatherings.

Ingredients

  • 1 pound (450g) ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
  • ½ cup water
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 2 cups shredded Mexican blend cheese, divided
  • 1 bag (32 oz) frozen tater tots
  • ½ cup sour cream (optional)

Optional Toppings

  • Diced tomatoes
  • Sliced green onions
  • Jalapeño slices
  • Chopped cilantro
  • Guacamole
  • Salsa
  • Extra sour cream

Instructions

Step 1: Prepare the Beef

Preheat your oven to 375°F (190°C).

In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is tender. Drain any excess grease.

Add the minced garlic and cook for 1 minute until fragrant.

Step 2: Add the Taco Flavor

Stir in the taco seasoning and water. Simmer for 2–3 minutes until slightly thickened.

Mix in the diced tomatoes with green chilies, black beans, and corn. Cook for another 2 minutes.

Step 3: Assemble the Casserole

Lightly grease a 9×13-inch baking dish.

Spread the beef mixture evenly into the dish.

Sprinkle 1 cup of shredded cheese over the beef mixture.

Arrange the frozen tater tots in a single layer across the top.

Step 4: Bake

Bake uncovered for 30–35 minutes, or until the tater tots are golden brown and crispy.

Remove from the oven and sprinkle the remaining 1 cup of cheese over the top.

Return to the oven for 5–7 minutes, or until the cheese is melted and bubbly.

Step 5: Serve

Let the casserole rest for 5 minutes before serving.

Top with your favorite taco toppings such as sour cream, salsa, diced tomatoes, green onions, cilantro, or jalapeños.

Tips for Success

  • Use ground turkey or chicken for a lighter version.
  • Add a layer of refried beans for extra richness.
  • Spice it up with pepper jack cheese and extra jalapeños.
  • Make ahead and refrigerate for up to 24 hours before baking.
  • Store leftovers in an airtight container for up to 3 days.
