Marinated Cucumber Onion and Tomato

  • Optional: fresh dill or parsley

Instructions

  1. Prepare the vegetables
    Slice cucumbers and onions thinly and chop tomatoes.
  2. Make the marinade
    In a bowl or jar, whisk together vinegar, water, olive oil, sugar, salt, and pepper.
  3. Combine
    Add vegetables to a large bowl and pour marinade over the top. Toss well.
  4. Chill
    Refrigerate for at least 1 hour before serving for the best flavor.
  5. Serve
    Stir before serving and garnish with fresh herbs if desired.

Tips

  • Tastes even better after a few hours in the fridge.
  • Add feta cheese for a Mediterranean twist.
  • Great alongside grilled chicken, fish, or barbecue.
