Taco Lasagna

Taco Lasagna is the ultimate fusion of two family favorites—zesty tacos and cheesy lasagna. Layers of seasoned ground beef, tortillas, salsa, and melted cheese come together to create a hearty, crowd-pleasing meal that’s perfect for weeknight dinners, potlucks, or game-day gatherings. Every bite is packed with bold Mexican-inspired flavors and gooey, comforting goodness.

Ingredients

For the Meat Filling

  • 1½ pounds ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
  • ¾ cup water
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup salsa

For the Layers

  • 8 medium flour tortillas
  • 3 cups shredded Mexican cheese blend
  • 1 cup shredded cheddar cheese
  • 1 can (10 ounces) diced tomatoes with green chilies, drained
  • ½ cup sour cream

Optional Toppings

  • Chopped cilantro
  • Sliced green onions
  • Diced tomatoes
  • Sliced jalapeños
  • Avocado slices
  • Guacamole
  • Extra sour cream

Instructions

Step 1: Prepare the Meat Mixture

Preheat your oven to 375°F (190°C).

In a large skillet over medium-high heat, cook the ground beef and diced onion until the beef is browned and the onion is tender. Drain any excess grease.

Add the minced garlic and cook for about 30 seconds until fragrant.

Stir in the taco seasoning and water. Simmer for 3 to 4 minutes.

Mix in the black beans, corn, and salsa. Cook for another 3 minutes, stirring occasionally. Remove from heat.

Step 2: Prepare the Baking Dish

Lightly grease a 9×13-inch baking dish.

Spread a thin layer of the meat mixture on the bottom of the dish.

Step 3: Build the Layers

Place two tortillas over the meat mixture, overlapping slightly if needed.

Spread about one-third of the meat mixture over the tortillas.

Sprinkle a generous amount of Mexican cheese blend over the meat.

Add a few spoonfuls of diced tomatoes with green chilies.

Repeat the layers until all ingredients are used, finishing with tortillas on top.

Spread the sour cream evenly over the final tortilla layer.

Top with the remaining Mexican cheese blend and cheddar cheese.

Step 4: Bake

Cover the baking dish loosely with aluminum foil.

Bake for 25 minutes.

Remove the foil and continue baking for 10 to 15 minutes, or until the cheese is melted, bubbly, and lightly golden.

Step 5: Rest and Serve

Allow the Taco Lasagna to rest for 10 minutes before slicing.

This helps the layers set and makes serving easier.

Step 6: Garnish

Top with chopped cilantro, green onions, diced tomatoes, jalapeños, avocado slices, or your favorite taco toppings.

Tips for the Best Taco Lasagna

  • Use corn tortillas for a more traditional Mexican flavor.
  • Add a layer of refried beans for extra richness.
  • Swap ground beef for ground turkey or shredded chicken.
  • For a spicy version, use hot salsa and pepper jack cheese.
  • Let the lasagna rest before cutting to prevent it from falling apart
