Mexican Street Corn Pasta Salad 🥗🌽
Ingredients
Salad
- 12 oz pasta (rotini or shells)
- 3 cups corn kernels (grilled or roasted)
- ½ cup red onion, diced
- ½ cup cilantro, chopped
- 1 jalapeño, diced
- 1 cup cotija or feta cheese
Dressing
- ½ cup mayonnaise
- ¼ cup sour cream
- Juice of 2 limes
- 1 tsp chili powder
- ½ tsp smoked paprika
- ½ tsp garlic powder
- Salt and pepper to taste
Instructions
1. Cook the Pasta
Boil pasta until tender.
Drain and rinse with cold water.
2. Roast the Corn
Cook corn in a skillet or grill until slightly charred for smoky flavor.
3. Make the Dressing
Whisk together:
- mayonnaise
- sour cream
- lime juice
- chili powder
- paprika
- garlic powder
- salt
- pepper
4. Combine
Mix pasta, corn, onion, cilantro, jalapeño, and cheese.
Pour dressing over and toss well.
5. Chill & Serve
Refrigerate 30 minutes before serving for best flavor.
