No-Bake Eclair Cake

Ingredients

  • 2 boxes instant vanilla pudding
  • 3 cups cold milk
  • 1 tub whipped topping
  • Graham crackers or plain tea biscuits
  • Chocolate frosting or chocolate ganache

Instructions

  1. Whisk pudding mix with cold milk until thick.
  2. Fold in whipped topping.
  3. In a dish, make one layer of graham crackers.
  4. Spread half the pudding mixture on top.
  5. Add another cracker layer.
  6. Spread the remaining pudding mixture.
  7. Finish with a final cracker layer.
  8. Spread chocolate frosting or ganache on top.
  9. Refrigerate for at least 6 hours, preferably overnight.

Simple Chocolate Ganache

  • 1/2 cup cream
  • 1/2 cup chocolate chips

Heat cream, pour over chocolate, mix until smooth.

Tips

  • The crackers soften in the fridge and become cake-like.
  • Best served chilled.
  • You can add banana slices or coffee flavor for variation.
