Ingredients
- 2 cups elbow macaroni
- 1/2 cup mayonnaise
- 2 tbsp vinegar or lemon juice
- 1 tsp mustard (optional)
- 1/2 cup carrots (finely diced)
- 1/2 cup bell pepper (diced)
- 1/4 cup onion (finely chopped)
- 2 boiled eggs (optional)
- Salt & black pepper to taste
- 1 tsp sugar (optional, balances flavor)
Instructions
1. Cook the Pasta
- Boil macaroni in salted water until soft (8–10 minutes).
- Drain and rinse with cold water to stop cooking.
2. Prepare Mix-ins
- Chop vegetables finely.
- Dice boiled eggs if using.
3. Make Dressing
- Mix mayonnaise, vinegar, mustard, salt, pepper, and sugar.
4. Combine
- Add pasta, veggies, and eggs to a large bowl.
- Pour dressing over and mix well.
- Adjust seasoning to taste.
Chill & Serve
- Refrigerate for at least 1 hour before serving for best flavor.
